Desserts

Tonight on Spring Baking Championship on HGTV, one of the challenges was for the bakers to elevate one of their favorite childhood desserts. That got me thinking about MY favorite childhood desserts.

My uncle on my mother’s side was a baker. I don’t know if he learned his trade in the army or by osmosis from my grandmother. He owned his own bakery for a few years and, after closing it, worked first at the local prep school, until finally settling in as the baker at Masonic Home and Hospital, a rehabilitation hospital and nursing home for people who were members of the Masonic Temple Association.

This man made the most INCREDIBLE baked goods. It’s amazing that he could make hundreds of desserts for the people at Masonic using these huge tubs for the dough and ovens to bake in and each one tasted as delicious as if it was one of only a dozen.

My favorites were his chocolate eclairs. They were all one piece filled with cream and delicious chocolate on top.

He also made something called a Hermit Cookie. I found it quickly online. They were square bar cookies with ginger and molasses and raisins. One version I found is called New England Hermit Cookie Bar with the story that they date back to the Pilgrims and they were good for travel because they were dense and stayed moist for up to two weeks! Maybe his mother, my grandmother, brought the recipe with her when she immigrated from the Galician area of Poland in the early 1900s!

I do remember my uncle’s Hermit cookies being overall dark like the inside of this one.

In addition to his job and making desserts for family events, he made the wedding cakes for my mother, and for my cousin.

We did not have homemade desserts in our house. They were store bought cookies and pastries. My mother worked full time and she wasn’t really a baker, with the exception of the four layer chocolate cake with whipped cream filling and chocolate frosting we requested for our family birthday parties! She never said no! There would always be cake left over and we would eat that until there wasn’t a crumb left anywhere.

I do love my desserts!

Pizza

I love pizza. I could eat pizza every day. My stomach and intestines might have something to say about that since doughy stuff and them are not always a happy couple.

My dad used to work until 9pm on Friday nights at the paint store and for dinner he’d buy a small sausage pizza from Verdolini’s. He’d bring home the leftovers and my sisters and I had them for lunch on Saturday.

We live 20 minutes away from the town that gives Connecticut the (self-given) title “Pizza Capital of the World”. That would be New Haven, the home of Pepe’s pizza, Sally’s Pizza, Modern Pizza, and one of my favorites, De Legna x Nolo.

But even closer to home are some excellent pizza places! Right down the road is Fabi’s and in the next town The Bar.

I think the best pizza has a super thin crust, and I don’t mind a char on the bottom. Usually my husband and I will get our own small pizzas in which case mine is a white pizza (no sauce) with eggplant and ricotta cheese. There is mozzarella on there too of course! My husband usually gets a sausage or a pepperoni.

If we’re ordering with a group, I always make sure there is a white pizza and other than that, will eat whatever is ordered!

I liked that this pizza has 9 pieces which means I can eat 6 pieces (thin crust remember? – you can eat more!) and still have enough for lunch the next day.

2025 Physical Goals

All my life I’ve tracked the numbers on the scale and have a roller coaster relationship with food and my body. The January 1 entry in my first diary as a soon to be 10 year old says among other things, “I resolved will try to exercise every day”. I was 9 years and 8 months old.

Maybe it was because the 60s and 70s were full of the Twiggy models or maybe it was because in my brain, I was not petite, just short. I topped out at 4’11” in sixth grade, never to reach the ultimate next foot.

Over the years I’ve used tracking methods like Weight Watchers and Fitness Pal and worked out to the all the Jillian Michaels and The Firm Workouts in existence, and a couple of times over the last four years, I’ve worked with Jennifer, a nutritionist at Evolved Nutrition in Wallingford.

Working out, has never been an issue for me. I’m using my Peloton in one way or another for up to 45 minutes 6 days a week. But what do they say? Losing weight is 80% diet and 20% exercise…..

This January 1st, as the weight crept up from vacations and general not paying attention, I knew I had to get serious. Is it the impending 65th birthday around the corner? Probably! But more than that, I know, because I’ve done it, that when I lower my weight, I feel better. I have more energy, my arthritis doesn’t bother me (as much), my hip pain disappears. It’s a no-brainer. But sometimes so hard to just take that first step.

So, I’ve started up the Fitness Pal app and really started using it. I’m more aware of how I feel after each meal, what works and what doesn’t. I’m becoming more aware of how I feel emotionally. I’m drinking more tea, and doing more meditation.

I’m looking at the different strength workouts on Peloton to work on lighter weights and more toning, like Barre workouts instead of trying to life 20 pounds.

1,000 minutes on January 14th!

I achieved my first 1,000 minutes only 14 days into the new year! That’s because my husband and I and another couple in the neighborhood join up in the afternoon when we can to take a walk to the center of town and back. 2 miles, 46 minutes and a great break in the late afternoon. The first year I was in the challenge I completed 13,000+, and last year was 14,000+ so it’s my goal to hit the 15,000 this year.

Put a Lid on That!

Write about your most epic baking or cooking fail.

Picture this –

I’m standing at the kitchen counter in my pretty pink Izod polo shirt with the alligator and a popped collar (hey, it was the ‘80s!) and I am blending broccoli, something, and something else, hoping it will turn into a tasty broccoli soup.

Unfortunately, I failed to make sure the lid was on tight enough! The top flies off and green liquid is flying everywhere – and it’s HOT!

After I freak out and regain my senses, I turn off the blender and begin cleaning up in my pretty pink Izod polo shirt that is now covered in broccoli soup.

July 24 Hump Day Photo

In August of 2006, my family and my sister and her family went to a Mayan Palace resort in Puerto Vallarta Mexico.

For one of the dinners we went to Las Carmelitas which was approximately a half hour outside the side far up into the hills. It was a little nerve wracking being driven so far away from the resort in a taxi in a country we couldn’t speak the language! After passing through the city, we turned off the main road onto a road with a gate at the bottom. What did we get ourselves into! It was a dirt road, bumpy and winding. At one point, my sister’s taxi was having trouble making it up the hill, so she and my niece jumped out of the car and started walking!

Once we got to the top, there was a beautiful open air restaurant overlooking the water. There were chickens walking around and a toddler scooting around on his toy.

The food was so incredibly fresh, I remember the ceviche in particular, it was like it had just come out of the sea. The margaritas weren’t bad either!

We had a beautiful dinner as we watched the sun set over the water. After a few hours, the taxis returned to take us back to the resort. Whoever recommended Las Carmelitas knew what they were talking about. This picture is one of the many I took of the setting sun.

Butterfingers Rule!

Describe your dream chocolate bar.

My dream chocolate bar is a Butterfinger bar.

I like to nibble all the chocolate off the sides and top first. Then I start on the peanut butter layers inside. I work all around the bar until it’s gone. It gets messy!

I haven’t had a butterfinger bar in a very long time.

Fruity Favorites

First and my FAVORITE OF ALL TIME fruit is Watermelon! Just straight up – no salt, no salad – good plan old watermelon. If I let myself, I could eat a whole one, just slicing and slicing away at it.

2nd is Bananas. But they have to be “just right”. A little on the not-quite-ripe side is best. Just ripe is good too. Once they tip over towards too ripe, they get tossed into a bag and into the freezer for my smoothies!

3rd is Grapes. Red, seedless at room temperature! I’m not picky about their firmness or ripeness because they are usually always good!

4th is Apples. My most favorite is Macoun followed by Empire but lately, apples at the store are such a crap shoot as to whether they are crisp or mushy! I usually cut them up and eat them with peanut butter!

5th is Strawberries. They were my ultimate favorite until I worked in strawberry fields in my late teens. We spent the spring, training the vines. During picking season we weighed the containers, worked the register, and also stood at the end of rows directing people where to go. I would wear a hoodie sweatshirt and fill the pocket with strawberries! By the end of the second season, I never wanted to see another strawberry for the rest of my life! But recently, I’ve come back around to enjoy them.

All the talk of these fruits has made me hungry! There are apples at home right now, so I guess that’s what I’ll have today!

I Scream, You Scream…..

What’s your go-to comfort food?

I had to think about what I would reach for and want to reach for if I need comforting and I’d have to say it’s Ben and Jerry’s ice cream.

My original go-to was Chunky Monkey but I’ve moved on to Cinnamon Bun. If my husband was out of town on a rare trip without me, I’d hit the grocery store and make my pick. I’d try to divide it out over the two nights but usually not quite make it and the second night I would be wanting more!

It’s been awhile since I’ve reached for a pint but there have been moments that I’ve gazed at them longingly through the freezer case!

Sugary Hangover

I have been eating super clean since early November with occasional (T-Day, Christmas) little splurges of treats.

But yesterday for my husband’s birthday we had family over and had pizza, and a Carvel ice cream cake, and cupcakes (because I think my son thinks I’m a heathen and would not have something to stick a candle in). I had the pizza, I had the cake and although I was going to save the cupcake, I ate it bit by “I’m not going to eat anymore” bit.

I woke up in the middle of the night to gagging on acid from the reflux of food I ate quickly confirming that my new eating habits were the right choice for me.

This morning I feel like the morning after an alcoholic binge – a shaky, somewhat weep mess. I don’t even drink anymore for that exact “oh lord what did I do/say” reason <– which really hasn’t been a problem for a number of years, but one alcoholic drink will have that affect on me.

Or maybe it’s all because I lost an hour of sleep in the time change….
